Bo Peep's Shepherd's Pie

Little Bo Peep would have appreciated this Shepherd's Pie at Greens - it lost the lamb, too. How can the chef make this pie so savory, rich and hearty without meat?

This version had mushrooms, carrots, parsnips and sweet potatoes under a Parmesan mashed potato crust. Sell my clothes, I died and went to heaven.

Although that does look oddly like a bone poking out from the side...

Anyway. Gawrsh. I never would have thought of shepherd's pie without meat, since I usually make it to use up leftover meat... But I'm so turned on by this.

Cookiecrumb, not a bone, a frizzled carrot. If you figure out how they made it taste so meaty without meat, tell, tell!

You're making me angry now, I somehow missed going to greens on my recent trip to the bay area and went to milennium again as it seemed somehow cosier for my poor sick grandma. Millenium was wonderful but I wish I'd fitted in a trip to greens too!!
