My grandmother, who was a fabulous cook, soaked it in milk and sauteed it lightly, making gravy with onions and stock and more milk in a separate pan. But I just could not stomach the taste. I'm the same way with oysters and clams - just can't do it. But I like sweetbreads, prepared MY way - lightly cooked and in warm salad with a vinaigrette. For me, sweetbreads need that extra punch of lemon or vinegar. <br /><br />But liver - sorry.
